Valentine’s Day Chocolate Bark

There’s a reason why chocolate is synonymous with Valentine’s Day. It’s rich, indulgent, and delicious in all forms. Our favorite chocolate treat on Valentine’s day is one where all you need is 1-2 bites to feel satisfied, and makes leftovers that last you well beyond February 14th. 

For our Valentine’s Day Chocolate bark, we use dark chocolate (or semisweet chocolate) as the base. Dark Chocolate is the most heart-healthy type of chocolate, as it contains less sugar and fat than its other two counterparts (white chocolate and milk chocolate). For that reason, it is also slightly more bitter and floral than white and milk chocolate which tend to be very sweet, milky, and nutty. Dark chocolate’s blank canvas acts as the perfect base for our Valentine’s Day treat, because we can add any fruits and nuts we choose and it won’t be overwhelmingly rich. Feel free to mix it up by adding your favorite toppings, or even switching out the dark chocolate for a different kind.

Prepare Ingredients

Roughly chop pistachios and line a baking sheet with parchment paper.

Melt Chocolate

Place dark chocolate and coconut oil in a medium heatproof bowl and microwave in 30-second intervals until melted. Alternatively, create a double boiler: Bring 2 inches water to a boil in a medium pot over high heat. Place bowl with chocolate and coconut oil over pot and stir until chocolate is melted and smooth, 2–4 minutes (see recipe tip). Transfer to prepared baking sheet. Using a spatula, spread into a smooth, even layer as thin as possible.

Immediately sprinkle coconut, chopped pistachios, and strawberries in an even layer over melted chocolate. Transfer baking sheet to refrigerator or freezer to chill until set, at least 20 minutes.  

Once chilled, break dark chocolate bark into pieces. Serve cold. Store any extras in a large resealable plastic bag and freeze for up to 2 months.
